As autumn slowly wraps our olive groves in a golden mantle, we sense nature awakening to a new rhythm. It is time to step together into a world of scents, colors, and flavors that bind us to the land and tradition. The olive harvest brings moments filled with hope, patience, and love for the fruit that symbolizes Mediterranean life.

The year 2026 proved exceptionally challenging for olive growers, marked by extreme weather conditions that forced producers to exercise utmost caution and adaptability.

Although our olive groves—situated at a slightly higher altitude and benefiting from a specific microclimate—usually withstand summer heatwaves better, the impact of climate change was felt in every corner of the peninsula this season. The summer of 2026 will be remembered for prolonged heatwaves and a critical lack of rainfall. By early September, the pressure was at its peak; every drop of autumn rain was eagerly awaited to help the fruit swell and trigger the oil-formation process. Throughout the season, we conducted intensive trials using cover cropping and mulching methods to preserve soil moisture amidst these extreme conditions, achieving excellent results. A silver lining to the extreme summer temperatures (exceeding 35°C) was that they naturally halted the development of the olive fruit fly, the olive tree's most significant pest. Since the fly cannot tolerate high temperatures, the fruit remained exceptionally healthy and free of infestation—a perfect prerequisite for producing top-quality oil.

The air holds the delicate scent of ripe fruit—a blend of earth, freshness, and the sun that warmed our olive trees all summer long. Each olive holds a story of long days and warm nights, of dewdrops and gentle breezes. The harvest is not merely work; it is a song of nature that we listen to with our hearts.


The olives slowly shift from green to deep purple, their skins glistening in the first rays of the morning sun. Every fruit is precious; every leaf whispers of years gone by and hopes for the future. In this moment, as we gather the harvest, we feel a deep connection to nature and to our ancestors.

Preparing for harvest: how to ensure top quality


Before we begin the harvest, it is important to prepare with care and love. Every detail can influence the quality of the oil we produce. Here are a few tips we always follow:


We monitor weather conditions – Harvesting usually takes place on dry days to avoid moisture that could affect the quality of the fruit.


We use manual methods – Gently picking the olives by hand or lightly shaking the branches protects the fruit from damage.


Rapid processing – After harvesting, the olives are transported to the mill as quickly as possible to preserve the oil's superior quality, nutritional value, and organoleptic properties.


This preparation is not merely technical; it is also emotional. Each step reminds us of the importance of patience and respect for nature.


The Secrets of Premium Extra Virgin Olive Oil


Extra virgin olive oil is not merely a product—it is an art form. Every sip embodies the sun, the soil, and a love for the olive tree. To achieve this superior quality, it is important to understand a few key elements:


  1. Harvest time – Olives are harvested at the stage of optimal ripeness, when the fruit is rich in oil yet still fresh; prolonged storage leads to a decline in polyphenols—the natural antioxidants primarily responsible for the health benefits of extra virgin olive oil. Rapid processing preserves the oil's high biological value.

  2. Rapid processing – The olives are milled within 24 hours of harvest, preventing oxidation and the loss of aromas. Olives processed immediately after harvesting yield an oil rich in volatile compounds. This results in a distinctive, rich aroma reminiscent of freshly cut grass, green apple, or the olive fruit itself. Once the fruit sits, a hydrolysis process begins, raising the level of free fatty acids (FFA). The faster the processing, the lower the acidity percentage—a primary chemical requirement for the oil to qualify for the highest grade: extra virgin olive oil. 

  3. Cold pressing – A low-temperature pressing process preserves natural antioxidants and vitamins. Why did we choose state-of-the-art technology?

    Extremely high levels of beneficial polyphenols

    Polyphenols are highly heat-sensitive. The lower the temperature, the slower the activity of enzymes that break down these compounds. Processing at 22–24°C yields oil with the maximum concentration of polyphenols. Such oils exhibit a distinct pungency (a peppery sensation in the throat) and a pleasant bitterness—key indicators of their health value and potent antioxidant activity.

    Volatile compounds responsible for aromas like freshly cut grass, olive leaf, green tomato, or almond begin to evaporate and alter at temperatures above 25°C. By maintaining the temperature at 22–24°C, these delicate aromatic compounds remain fully captured within the oil. The result is an oil of superior organoleptic quality, ideal for competitions and culinary connoisseurs.

    Significantly longer shelf life

    Heat during processing promotes oxygen transfer into the olive paste and accelerates oxidation. When olives are processed at 22°C or 24°C, the peroxide value and free fatty acid levels remain at the lowest possible levels. Consequently, the oil is chemically more stable and retains its freshness, aroma, and beneficial properties in the bottle for much longer than oil processed at 27°C or higher.

  4. Careful storage – The oil is kept in dark bottles, in a cool (ideal temperature 15°C–18°C) and dark place, away from air and light.




    Each of these steps is like a note in a symphony of flavors that leads us to perfection.
